Although she got her start cooking in the US-influenced Cuba of the 1940s, Nitza Villapol can be thought of as the Julia Child of the Cuban revolution. Refugees smuggled copies of her books across the border to ensure they could cook up a taste of home. And those who remained learnt how to eat well as food became increasingly scarce. Cooking and appearing on TV until just five years before her death in 1998, Villapol encouraged Cubans to add root vegetables to their cakes, eat more indigenous plants and even taught them to substitute plantain peels for meat.
