Stephen Starr seems to singlehandedly create restaurant renaissances. He revitalized Philadelphia's dining scene in the 1990s, lured hipsters to NYC's Meatpacking District with Morimoto and is now bewitching New Yorkers with old-school service at Le Coucou. Though he admits he could live on tuna sandwiches alone, Starr dreamed up Le Coucou as a homage to fine dining details such as white tablecloths and waiters who might just persuade you to order the extravagant whole rabbit chef Daniel Rose cooks up. Diners might revel in the bent wood chairs and rustic-chic chandeliers, but this luxury didn't come cheap. "Financially [Le Coucou] will never be a big success…the amount we spent [on construction] was extreme—around $5 million. But I didn't do it to make a lot of money."
