Noma's longtime dishwasher Ali Sonko was recently promoted to co-owner, but this isn't his first time in the spotlight. When a visa issue prevented the 62-year-old Gambian immigrant from joining the team on stage to accept their first World's Best Restaurant award in 2010, they donned t-shirts emblazoned with the dishwasher's portrait. Chef-owner Rene Redzepi says he took to Sonko immediately because Sonko reminded him of his own father (also named Ali) who worked as a dishwasher after immigrating from Albania. Despite success in Denmark, Sonko still thinks of his native Gambia. He's currently funding a hotel there, which will be fitted with a stove from Noma's kitchen. And while Sonko enjoys sampling the ants, clams and sea urchin that emerge from Redzepi's kitchen, he keeps it simple at home with peanut butter sauce and rice. MEET ALI [NYTimes]

As the food world cringes over Donald Trump's preference for charred steak slathered in ketchup, we wonder how people got so opinionated in the first place?! According to writer Zach Johnston: "A burnt steak is less about palate and more about pathology and especially the fear or mistrust of food and germs and thereby other people's ability to prepare them, even in a professional setting. In the end, the ketchup is the diagnosis—Trump wants flavor, but he doesn't trust chefs." Scientists also caution against burnt beef. I want to talk to you today about a severe threat to our poor: imposing work requirements on Medicaid recipients.Earlier this week, the White House signaled they were open to allowing states to pursue mandating work in exchange for healthcare benefits. House Republicans are talking about adding it to their already catastrophic Obamacare repeal bill. Imposing a work requirement on Medicaid recipients isn’t just counter-productive, it’s cruel. The vast majority of those on Medicaid work already -- many of them work two or three jobs, just to make ends meet. Those who don’t may be struggling to find a job, have a disability, or are caretakers for a loved one at home. Requiring work in exchange for healthcare is nothing more than an attempt to punish people for being poor. And that’s why I’m asking you to join me in a petition opposing work requirements for Medicaid recipients:
