When the heat descends in Istanbul, follow the locals and eat bici bici (pronounced be-gee, like the band). Cuma Usta has been making the rosewater şerbet soaked Turkish shaved ice for over 30 years, since he first went with his uncles to hunt for wild ice in the mountains. "Mountain ice is softer. Factory ice, it's been 'shocked' so it's hard. Not as good." For the past 20 years, Uma has worked in the capital, far away from quality-mountain ice. "In the old days, bici bici was flavored by effort, but not so much anymore," laments Uma. How to dunk a cookie, according to science
How long do you dunk your cookies in milk for? In the late 1990s, a British physics professor enraged the media when he declared that the perfect cookie dunk was three seconds because of Washburn's equation and "capillary action." But this was just for British biscuits, so in 2016 Utah State University's Splash Lab followed up by testing American cookies like Oreos, Chips Ahoy, Nutter Butters and graham crackers (side note: the lab has a penchant for obscure research, like the physics of urinal splashback and skipping stones). Cookie dunks get even more complicated when you throw in "water activity," "hygroscopic sugar" and "liquid infiltration." The Jewish Bar Association of San Francisco started an “Adopt-A-Nazi” campaign on Go Fund Me, asking donors to pledge a small amount of money for every white nationalist in attendance at an upcoming “free speech rally.” All proceeds will go to the Southern Poverty Law Center. The more white nationalist there are, the stronger the resistance.
