Dalmatian cuisine is a typical Mediterranean cuisine, meaning that a lot of olive oil, garlic, herbs and spices are used. Of course, oily fish is unavoidable in these parts, and it is prepared by stewing, grilling or boiling. Traditional restaurants that serve delicious Dalmatian food are called konobas, and they are scattered all over the coast, so you have no excuse for not trying at least one of these fish specialties.

Pilchard (sardina) - this small fish belongs to the herring family and is the most consumed one in Croatia. The greatest catch of sardine is in the vicinity of the islands of Mljet, Lastovo, Vis, and Dugi otok. In fact, pilchard is so popular that last year Pilchard Fishing Academy opened in Fažana, Istria, offering lectures on traditional ways of preserving, processing and preparing the fish, as well as organizing a competition in salting the pilchard.
If you happen to find yourselves in Istria in May, check out the Pilchard Festival in Istrian town of Novigrad - Gnam Gnam Fest, where you can enjoy in tasting pilchards of highest quality, since their season is in May.

Anchovy (inćun) - another oily fish dish. This small fish is widespread throughout the whole Adriatic, but can be mostly found in the area of Komiža and Dugi otok. Almost every menu features marinated anchovies. What makes them special in Dalmatia is adding condiments, such as capers, onion, salad leaves, tomatoes.

Tuna - tuna steaks are also really popular in Dalmatia, as this big blue fish can be found in all parts of the Adriatic. Tuna steak can also be prepared in a stew with addition of tomato sauce and red wine for a very tasty meal. Or, another twist, is Dalmatian tuna pašticada (as pašticada usually includes beef), which is an old recipe dating back to the 15th century. Marinading the tuna overnight before putting it in red sauce adds an additional flavor, but this step is optional. The dish is usually served with homemade pasta or gnocchi.

Atlantic mackerel (skuša) - considered to be the tastiest oily fish in the Adriatic. It inhabits the Atlantic Ocean and can be found in the seas from Norway to Morocco. Its soft meat has a very strong taste and is full of vitamins and minerals. It also contains omega-3 fatty acids and very few harmful saturated fats, which makes it is very nutritious and healthy, especially for maintaining heart health. In Dalmatia, mackerel is usually prepared in the summer on a grill with an addition of some spicy sauce, but it can be fried, smoked or cooked, as well.

Chub mackerel (lokarda) - or Pacific mackerel, very similar to the Atlantic mackerel, and also super healthy. It is widespread throughout the Atlantic, the Indian and the Pacific Ocean, so basically - everywhere. Its meat is of high quality, and it can be butter fried, deep fried or grilled. It is also delicious when filled with savory fillings, such as with pine nuts or capers.
