Brodet, a dish where "it all begins and ends" is probably the most popular Dalmatian specialty, so it's high time to write about it. Due to many dialectal varieties in Croatia, there are several names for this dish, but all very similar: brodet, brudet and brujet. In short, they all refer to a soup made of fish and/or seafood.

In the Croatian Adriatic, the dish is prepared with several sorts of fish and some inevitable ingredients: olive oil, salt and pepper, onions and garlic, parsley and peeled tomatoes. The older generation will say that the fish used for brodet is "any fish you caught last night", but in most cases the finest brodet is made of grouper, scorpion fish, frogfish (monkfish), sea bass, sea-bream, eel, conger and John Dory.

Many chefs combine fish with crabs and shells, adding their own combinations of spices. There are hundreds of different varieties of brodet, and each tells a story about a certain area, its history and family heritage. Therefore, brodet of southern Adriatic and Dubrovnik would taste "richer" as it is prepared with grouper, while the one from the mouth of Neretva is inconceivable without eels and frogs, slightly burning your mouth with local chili peppers.
