How do you start an internationally loved coffee company from a sleepy south Swedish town? By accident if you're Anne Lunell and Charles Nystrand, owners of cult favorite Koppi Coffee Roasters. The pair met in high school and fell into the coffee biz after cafe odd jobs led them to surprise back-to-back wins at their first Swedish Barista Championship. Since then, they've operated pop-up cafes in Tokyo, developed a coffee program for Noma and partnered with coffee farmers everywhere from Colombia to Kenya (where Lunell once tasted 600 cups in a day). With 90% of their customers abroad, we think Starbucks should get worried. MEET KOPPI [Sprudge]

Skip the sushi and sake at this Japanese institution
|
Things might be looking up for Swedish coffee culture, but Japan's traditional izakaya are in trouble. Izakaya serve beer and affordable food—they're a Japanese institution a bit like English pubs. But a proliferation of cheap chain restaurants, tendency for young people to drink at clubs and declining food and drink sales means izakaya landlords would rather rent space to hotels or elderly care centers. While Tokyo expands visitor offerings for the 2020 Olympics, will a night out at an izakaya be on the menu? LEARN MORE [Forbes]

This molasses is NOT for gingerbread
|
If 'pomegranate molasses' makes you imagine fruity holiday cookies, think again. This sticky, sweet condiment is popular throughout the Middle East, where they drizzle it over everything from lamb to bulgur (tip: try it as a salad dressing). It's made from processing pomegranate seeds to a mush before boiling the juices to maple syrup ooziness. A good bottle costs about the same as a quality olive oil and makes a worthy swap for cheap balsamic. LEARN MORE [Saveur]
